Lemon Vinaigrette Dressing

 

I don’t know what it is but I love making salad dressing…. it’s a simple combination of ingredients that creates complex flavor and can bring a dish to life. This specific recipe uses the champagne vinaigrette as a base with addition of lemon juice and zest.

Salad dressing is super simple and fast. They taste so much better than anything you can buy in the store and don’t have any of the preservatives. All you will need is a mini blender or a stick blender, and a few key ingredients.

Tips & Tricks:

  • A mini blender, such as the mini-Bullet is perfect for emulsifying the dressing.
  • Always use fresh herbs.
  • A pint mason jar is perfect for storing the dressing in the fridge for up to 7 days.

Lemon Vinaigrette Dressing

A lemony vinaigrette that can be used on various salads. Its got a little punch from the lemon to lighten up any meal.
Prep Time 30 minutes

Equipment

  • Measuring cups/spoons
  • Mason Jar
  • Mini blender or stick blender
  • Chef's knife
  • Cutting board

Ingredients
  

  • 1/2 cup champagnevinegar
  • 1/4 cup Olive oil
  • 1 1/2 tbsp shallots, chopped
  • 1 clove garlic, chopped
  • 1 tsp fresh Thyme
  • 1 1/2 tsp lemon juice
  • 1/2 tsp lemon zest
  • 3/4 tbsp dijon mustard
  • 1 tsp salt
  • 1/2 tsp fresh cracked pepper

Instructions
 

  • Combine all ingredients into a mini blender and pulse until smooth. Store in mason jar, good for about 1 week when stored in refrigerator.
