Waffles
My husband always says that waffles are pancakes with syrup traps! They are crunchy, bready goodness that can pack savory and sweet into one bite. I love making waffles and heaping on yogurt and fresh berries or breaking up my bacon and stuffing it into the little squares! I know that not the typical butter and syrup, but it is just so good.
When my husband and I lived in Maine, we were on the hunt for the perfect waffle recipe. We did a lot of recipe testing during this time of our lives, partly because winter is so cold and soooooooo long. We ended up experimenting with lots of different flour combinations in attempt to perfect our waffle. We have tried hazelnut flour which gives the waffles a sweeter flavor but also tends to make them slightly more dense; they typically need more cooking time. Almond flour on the other hand, provides slight sweetness and a more toothsome texture. Personally, I love almond flour combination!
This recipe is a version of our perfect waffle recipe – when we moved back to California, the paper we wrote to PERFECT combination of ingredients went missing. So we are back on the hunt with a new waffle iron and this is our latest version! Hope you enjoy!
Tips & Tricks:
- If you don’t have almond or hazelnut flour, use all-purpose flour.
- Hazelnut flour tends to be more dense, 5-6 minutes cooking time is recommended (but dependent on your waffle iron).

- Measuring cups/spoons
- Batter bowl
- Large whisk
- Waffle iron (Cuisinart WAF-300PI Belgian waffle maker)
Waffles
Ingredients
- 2 cups all-purpose flour
- 1/2 cup almond or hazelnut flour
- 4 tsp baking powder
- 1 tsp salt
- 2 tbsp granulated sugar
- 2 cups whole milk
- 6 tbsp butter/oil melted
- 1/2 tsp vanilla extract
- 2 eggs
Instructions
- Combine all-purpose, almond or hazelnut flour, baking powder, salt, and sugar into large batter bowl.
- In a large measuring cup, combine milk, melted butter, vanilla extract, and eggs; mix with whisk to break up egg yolks.
- Combine wet and dry ingredients using large whisk.
- Let stand for 5 minutes.
- Heat waffle iron to desired temperature and cook wafflesuntil golden brown on each side. Our typically takes about 5-6 minutes each withour waffle iron.
